Let's talk refreshing summer salads

It's been hot lately. As in, really hot. As in, too hot for anything hotter than fresh-out-of-the-refrigerator. So salad again it is.


Sometimes you need to let yourself be inspired by what's fresh (and, let's face it, on sale) at the grocery store, which is exactly what I did this week. Mangoes on sale? Avocados on sale? Sounds like a plan to me!

This week, we have a summery, citrus-y mango and avocado salad with a lime-cilantro vinaigrette. Partially inspired by my grocery store finds, partially inspired by salads I've had during the warmer months at local restaurants. A quick Pinterest search found a delicious dressing, and the rest was cake--er, salad!

Layering homemade lime-cilantro vinaigrette, diced grape tomatoes, mango, navel orange, chickpeas, and avocado, topped with chopped romaine.

Tip: Using mason jars for this, and layering as such, will keep your avocado perfectly green all week! I didn't believe it was possible until I saw it with my own two eyes.
