Mason Jar Monday: Summer Veggie Salad

Last time I covered my favorite summer fruits, so naturally it's time to let the in-season vegetables shine!

One of my many pastimes, scrolling Buzzfeed, led me to a great list of summer vegetable recipes. While I can't wait to try almost all of them, they're not all mason jar-friendly. The Grilled Corn & Zucchini Salad recipe caught my eye as a new assortment of things to put in my jar instead of my usual combinations.

I followed the recipe, originally from Minimalist Baker, as best I could; I forgot to grab lemons for the dressing, so I opted for lime juice instead, along with not having any fresh garlic on hand, so I subbed in a dash of garlic powder. None of these majorly changed the overall taste of the dish. It's just food--don't be afraid to experiment!

Layering homemade sundried tomato dressing (closer to a pesto, it's super thick!), roasted chickpeas, grilled zucchini, grilled corn, and topped with chopped spinach. My avocados weren't quite ripe enough when I was layering my jars, so I kept them to the side to add each day after plating.

Nothing like corn, zucchini and avocados in the summertime!
